Apart from ice cream, summer is also the season of pancakes. The preparation of this delicious delicacy can be mastered by almost everyone. You can make pancake batter quickly. 2 eggs

Mix flour, sugar and salt in a bowl. In another bowl, mix milk, eggs and melted butter. Now gradually stir the liquid ingredients into the dry ingredients. Stir until smooth so that no lumps remain in the batter. Heat a frying pan and add a knob of butter or a drop of oil. Pour the appropriate amount onto one pancake and bake for about 2 minutes on one side, flip and bake for about 1 minute. Repeat the procedure.

2. Spinach pancakes with feta cheese

1 cup plain flour
1 cup milk
2 eggs
½ teaspoon salt
¼ teaspoon black pepper
1 cup chopped fresh spinach
½ cup crumbled feta cheese

In a bowl, whisk together flour, milk, eggs, salt and black pepper. Stir in chopped spinach and feta cheese. Heat a frying pan and add a knob of butter or a drizzle of oil. Pour the appropriate amount onto one pancake and cook for about 2 minutes on one side, flip and cook for about 1 minute. Repeat the procedure.

Serve the pancake with Greek yoghurt or a fresh salad.

2 teaspoons baking powder
½ teaspoon salt
1 cup almond or other vegetable milk
1 peeled, mashed banana
1 teaspoon vanillin extract

In a bowl, mix flour, sugar, baking powder and salt. In another bowl, mix together the vegetable milk, banana, melted butter and vanillin extract. Now gradually stir the liquid ingredients into the dry ingredients. Stir until smooth so that no lumps remain in the batter. Heat a frying pan and add a knob of butter or a drop of oil.
