Pasta salad with cottage cheese

Serve the pasta salad as a main course. It is as good hot as it is cold, so it is perfect for warm days or picnics. There are several variations of pasta salad, with meat, without meat, with tuna, with vegetables, with yoghurt, etc. We will prepare a pasta salad with cottage cheese. For this quick 20 minute dish we will need:

  • 100g of any pasta
  • 100g zucchini
  • eggplant
  • salt, oregano
  • tomatoes
  • cottage cheese
  • olive oil

Cook the pasta in boiling water. If you want the water to boil faster, cover the pot with a lid. Salt the water after it has boiled. This will prevent white spots on the bottom of stainless steel pots. Put the oil and the chopped vegetables in the heated pan. Add the tomatoes last. Season and stir in the cooked and drained pasta. Finally, stir in the cottage cheese. The pasta salad can be garnished with a fresh basil leaf or an oregano leaf.

We will stay in the village of Vyhne for a while, because it is full of hotels with excellent cuisine. Literally just a few meters from our first stop in Hotel Termál, there is Hotel Sitno. On the way we admire the beauty of the surrounding nature of the Štiavnické Hills. The hotel is a popular destination for family holidays and corporate events. In the kitchen we are welcomed by chef Miloš Szalay, who puts emphasis on the quality of ingredients and is pleased that most of them are products from local producers. He has prepared a real specialty for us, during the preparation of which we will practice a few concepts of gastronomy. We will be cooking with the almost forgotten vegetable of our grandmothers - kvass, but also with a novelty from the Steiger brewery - top-fermented Manjula beer.
